Healthy because…
Strawberries contain more vitamin C than citrus fruits. Just 200 grams of the sweet, red fruit provides our body with the recommended daily dose. Strawberries also contain valuable antioxidants. Although this cake is a small sin, it gets by with few calories.
Spelled flour, coconut flour, oat milk, agave syrup, oil, baking powder
Place all the ingredients in a bowl and mix with a hand mixer until smooth. Grease a spring form (26 cm) and pour in the batter.
Springform pan, oven
Bake the dough in a preheated oven at 180 degrees top/bottom heat for 30 minutes. Do a chopstick test and remove the cake from the oven when no more dough sticks to the skewer. Leave to cool in the tin for half an hour, then turn out onto a wire rack and leave to cool completely.
Coconut Pumpkin, Vanilla Extract, Strawberries
Mix the coconut oatmeal with the vanilla extract and spread the mixture over the cooled cake base. Wash and cut the strawberries and spread them on the coconut mixture.
Potato starch, water, strawberry jam, desiccated coconut
For the glaze, mix potato starch with 2 tablespoons of water and strawberry jam until smooth. Boil the remaining water and stir in the cornstarch. Pour the finished glaze over the strawberries. Garnish with coconut flakes.
