Our hot tortilla is on the plate in 20 minutes and tastes simply wow: a bit spicy thanks to the chili, the zucchini makes it nice and crunchy and the spring onions give it a spicy freshness. On top comes hearty salmon ham, rounding the whole thing off perfectly.

Wash zucchini and cut small. Peel the clove of garlic and onion, deseed the chili pepper, chop everything finely and saute in a covered pan with olive oil until translucent. Add zucchini and fry for 4 minutes.

Clean the spring onions, rinse and cut into rings. Beat eggs with mineral water, salt and pepper and add to pan. Cut the salmon ham into strips and spread over the top. Allow to set and sprinkle with spring onions.
