  1. Peel and dice the onion. Cut the bacon into strips. Fry in a grease-free, non-stick pan until cooked. It should not be completely crispy. Then set aside in a bowl.

  2. Remove all but 1 tablespoon of excess fat. Saute the onions over medium heat for 8-10 minutes in the same pan, then over low heat. Add the brown sugar and caramelize the onions for about 20 minutes.

  3. Add bacon, coffee, water, increase to medium heat and bring to a simmer. Stir every 5 minutes for a total of 30 minutes. Remove from the stove and stir in the vinegar. If necessary, season with salt and pepper. Enjoy either fresh or let cool and transfer to a clean container for the fridge. Finished!
