The ingredients for fresh rolls
You need: 500 grams of wheat flour, 1 packet of dry yeast, 350 milliliters of lukewarm water, a teaspoon and a half of salt.
Here’s how it works: Place the flour in a large mixing bowl, add the yeast and salt and mix well. Then add the lukewarm water and mix with a fork to form a rough dough. It gets very sticky – and that’s normal. Cover the bowl with a clean towel and leave to rise at room temperature for three hours. Then put in the fridge. Now the dough must rest in the cold for about eight hours.

In the morning, take the dough out of the fridge, place it on the worktop and knead briefly. Divide into eight pieces of the same size, shape each into a ball and place on a baking tray lined with baking paper, leaving enough space between them. The consistency of the dough is very crumbly – so don’t be surprised. Then cut the top of the rolls in a cross shape and leave to rest for another ten minutes.

Meanwhile, preheat the oven to 200 degrees. Important: Place a small baking dish in the bottom of the oven and fill it with water. The steam ensures the incredibly crispy crust during baking. Then put the buns in the oven and bake for about 25 to 30 minutes until golden brown. They taste simply heavenly with salted butter and numerous toppings. Enjoy your meal!
