Ugandan Street Food: A Rolex for Breakfast?

Rolex refers to rolled flat cakes that are traditionally eaten in the morning.

This breakfast street food from Uganda has nothing to do with watches. But you still have to taste the wraps. Trust us!

Ingredients for 6 servings:

  • For the filling:
  • 300 g spinach leaves
  • 3 tomatoes
  • 200 g red cabbage
  • 2 carrots
  • lemon juice
  • Salt pepper
  • For the chapati flatbreads:
  • 250 g of flour
  • 125 ml water (warm)
  • 30ml oil (plus a little more for the pan)
  • For the vegan omelettes:
  • 250 grams of tofu
  • 1 onion
  • 1 small piece of ginger
  • 80 g chickpea flour
  • 200 ml plant-based milk
  • 1/2 tsp Kala Namak
  • 1/2 teaspoon turmeric
  • oil (for the pan)

And this is how it is done:

  1. For the filling, sort, wash and drain the spinach. Wash the tomatoes too, as well as the red cabbage. Cut tomatoes into small cubes, red cabbage into thin strips. Peel the carrots and grate them with a grater.
  2. Now prepare the flatbreads. Sift the flour and form a well. Pour the water and oil into this and then work everything into a dough. Divide it into six pieces that are all the same size. Sprinkle flour on a work surface and form the dough pieces into flat cakes (diameter about 25 cm).
  3. Fry the flatbreads one by one in a pan with oil. If bubbles form on the surface, turn the flat cakes over and then drain them on kitchen paper.
  4. While the flatbreads are baking, wrap the tofu in a clean tea towel and weigh it down with a few books. Peel the onion and ginger and cut into fine cubes.
  5. Now puree the tofu, chickpea flour and plant-based milk in a blender and then mix with the other ingredients for the omelettes. Heat the oil again in a pan and bake a total of six omelettes from the mixture.
  6. Finally, first place a flatbread on a large plate and place an omelette on top. Spread some of the filling on top, drizzle with lemon juice and season with salt and pepper and then carefully roll up the flatbread. Proceed in the same way with the other ingredients, so that in the end there are a total of six Rolexes rolled.

Who would have thought that Ugandan mornings are so warm and above all creative? Because that’s where you can eat Rolex, a kind of breakfast burrito, for breakfast. You can get the rolled flatbread right at hand as street food. Normally, of course, they are served with a “real” omelette, and of course you can choose the vegetarian instead of the vegan option. Then the name of this finger food also explains itself: It has little to do with a clock. In this case, Rolex is an abbreviation for “roll of eggs”.

Don’t feel like preparing the flat cakes yourself? Then simply use tortillas from the supermarket. For more flavor, you can spread the (homemade) flat cakes with a dip of your choice.
