The pan pizza is deliciously fluffy, versatile and easy to prepare. Another plus: the oven stays off, so the pizza from the pan saves energy and resources.

The base is a dough without yeast – there is no rising time for the dough. Instead, natural yogurt ensures that the pizza dough is airy and juicy. During the preparation of the quick tomato sauce and the preparation of the toppings, the pizza dough may stretch a little. In just 15 minutes it unfolds its flavor potential and is then more than ready to go into the hot pan. Recipe for a large or two small pizzas from the pan


For the dough

  • 200 grams of wheat flour, type 405
  • ½ teaspoon baking powder
  • 160 grams of natural yogurt, at least 3.5% fat
  • 3 tablespoons of olive oil
  • a pinch of salt

For the tomato sauce and the topping

  • 1 clove of garlic
  • ½ small onion
  • 100 grams of peeled tomatoes (tinned)
  • 2 tablespoons of tomato paste
  • ½ tablespoon oregano, dried
  • salt and pepper
  • 80 grams of grated Gouda
  • Topping of your choice e.g. mushrooms, onions, olives, salami, ham


  1. For the dough, mix the flour and baking powder in a mixing bowl. Mix the yogurt with a tablespoon of olive oil and salt, add to the dry ingredients and knead everything into a homogeneous dough. Add a little more flour depending on the consistency. Cover and let the dough rise for about 15 minutes.
  2. Meanwhile, prepare the tomato sauce: peel and finely chop the onion and garlic. Pour into a tall container. Add the peeled tomatoes, tomato paste, oregano, salt and pepper and puree with the stick blender.
  3. Then prepare the chosen topping. Wash and chop the vegetables, provide the salami and ham or cut into pieces.
  4. Knead the rested dough again. Divide into two pieces and form into balls.
  5. Flour the work surface and roll out the two balls into flat cakes.
  6. Heat a tablespoon of olive oil in each of two small pans. Alternatively, prepare the pizzas one at a time or use a very large pan.
  7. Fry the dough in the pan for three to four minutes on each side.
  8. After baking, spread the dough directly in the pan with tomato sauce, cover with ingredients of your choice and spread the cheese on the pizza.
  9. Bake on low for about five minutes. Then cover with a lid.
  10. Once the cheese has melted, the pizza is done and ready to serve.
