Does pizza only work in the oven? Wrong thought. With this pizza recipe, the oven stays cold, instead the pans are heated. A deliciously juicy, energy-saving treat, prepared in record time.

Pizza is probably the simplest and tastiest dish in the world. About 30 billion pizzas are eaten annually, most of them in the United States. There is not much left of the traditional Italian recipe, today there are numerous dough and topping variants. In fine gourmet restaurants, the Italian specialty is served wafer-thin with a fine truffle cream, while internationally successful American fast food chains rely on a thick base, minced meat topping and top-class cheese crust.

A wide variety of different pizzas can now also be found frozen. Especially when it needs to be quick and the spontaneous hunger for pizza strikes, the frozen version is the obvious choice. It’s a shame, nothing beats a good homemade pizza. However, most people are often put off by the time and work involved in the long preparation and rising time of the dough.

Quick energy-saving enjoyment

With this recipe for a homemade pizza from the pan, spontaneous pizza cravings can be satisfied in no time at home – without rising time for the dough and even without an oven. The pan pizza is deliciously fluffy, versatile and easy to prepare. Another plus: the oven stays off, so the pizza from the pan saves energy and resources.

The base is a dough without yeast – there is no rising time for the dough. Instead, natural yogurt ensures that the pizza dough is airy and juicy. During the preparation of the quick tomato sauce and the preparation of the toppings, the pizza dough may stretch a little. In just 15 minutes it unfolds its flavor potential and is then more than ready to go into the hot pan. A heavy cast iron or forged pan, which stores and transfers the heat evenly, is best suited here.

After the pizza flatbread is evenly baked on both sides, it can be topped with homemade tomato sauce, pizza cheese and your favorite toppings. Finally, the pan pizza is put on the lid. This is especially important because it is the only way the heat can be distributed throughout the pan. Since the heat in the pizza pan comes mainly from below, the cheese melts all over the dough. A highlight for anyone who can’t get enough of melted cheese.

In a flash, the pan pizza is steaming hot on the table and ready to eat. Good appetite.

Recipe for a large or two small pizzas from the pan

ingredients

For the dough

  • 200 grams of wheat flour, type 405
  • ½ teaspoon baking powder
  • 160 grams of natural yogurt, at least 3.5% fat
  • 3 tablespoons of olive oil
  • a pinch of salt

For the tomato sauce and the topping

  • 1 clove of garlic
  • ½ small onion
  • 100 grams of peeled tomatoes (tinned)
  • 2 tablespoons of tomato paste
  • ½ tablespoon oregano, dried
  • salt and pepper
  • 80 grams of grated Gouda
  • Topping of your choice e.g. mushrooms, onions, olives, salami, ham

preparation

  1. For the dough, mix the flour and baking powder in a mixing bowl. Mix the yogurt with a tablespoon of olive oil and salt, add to the dry ingredients and knead everything into a homogeneous dough. Add a little more flour depending on the consistency. Cover and let the dough rise for about 15 minutes.
  2. Meanwhile, prepare the tomato sauce: peel and finely chop the onion and garlic. Pour into a tall container. Add the peeled tomatoes, tomato paste, oregano, salt and pepper and puree with the stick blender.
  3. Then prepare the chosen topping. Wash and chop the vegetables, provide the salami and ham or cut into pieces.
  4. Knead the rested dough again. Divide into two pieces and form into balls.
  5. Flour the work surface and roll out the two balls into flat cakes.
  6. Heat a tablespoon of olive oil in each of two small pans. Alternatively, prepare the pizzas one at a time or use a very large pan.
  7. Fry the dough in the pan for three to four minutes on each side.
  8. After baking, spread the dough directly in the pan with tomato sauce, cover with ingredients of your choice and spread the cheese on the pizza.
  9. Bake on low for about five minutes. Then cover with a lid.
  10. Once the cheese has melted, the pizza is done and ready to serve.
