Recipe from the GDR: How to prepare Hoppel Poppel!
And it’s just brilliant because: It’s quick to prepare, hearty, tasty and cheap… and ideal for using up one or two leftovers from the fridge. The simple dish consists of potatoes, bacon and schnitzel and can be refined as desired. It is reminiscent of the classic peasant breakfast.

The dish gets its name from the use of old potatoes. They were processed into a delicious meal before ending up in the garbage, ie the colloquial “hop off”. Why: Even though the food is delicious, it remains a bit “poof”. Hop and pop light became “Hoppel Poppel”. By the way, the dish should not be confused with the punch of the same name made of cream, rock candy, egg yolk, brandy and various spices.

Ingredients for Hoppel Poppel from the GDR: This is what you need
You need: 700 grams of boiled and peeled potatoes, 100 grams of streaky bacon, 300 grams of schnitzel, 120 grams of butter or clarified butter, 2 onions, 8 eggs, salt and pepper, some caraway, marjoram and chopped parsley.

Here’s how it works: Slice the potatoes and set aside. Dice the bacon and cut the schnitzel into strips. Put a large pan on the stove and heat some butter in it. Then fry the potato slices until crispy and season with salt and pepper.
Heat some clarified butter in a second pan and fry the bacon and schnitzel in it. Season with salt, pepper, a little caraway and marjoram. But please be careful with the salt, because the bacon already brings a lot of it.

Now bring the potatoes and meat together in the larger pan. Crack the eggs, beat and pour the mixture over the potato and meat pan. Bring to the boil and stir. Season Hoppel Poppel with salt and pepper and best serve with a fresh salad and some mustard or horseradish. Enjoy your meal!
