Baking is chemistry – the reactions of the individual components of a dough with each other ensure that a delicious pastry is created in the end. But there are also recipes where baking seems to be one thing above all else: magic! That’s how it is with this so-called magic cake: a sponge cake in which a wide variety of ingredients are combined, only becomes a delicious and creamy sheet cake with three layers when it is baked in the oven!

It sounds unbelievable, but it works: What looks like crazy dough works almost like magic. In this recipe for delicious sheet cakes, three layers are formed just by the heat in the oven: a fluffy base, a creamy pudding filling and a light, fluffy meringue.

Ingredients for delicious pudding cake: you need it

You need: 125 grams of butter, 500 milliliters of milk, 4 eggs, a pinch of salt, 150 grams of powdered sugar, 2 packets of vanilla sugar, 2 teaspoons of vanilla extract, 120 grams of flour.

This is how it works: Grease a spring form well or line it with some baking paper. Attention: It is important that the mold is really tight, because the dough will be very runny! A long baking tray is also suitable. Then crack the eggs and separate. The egg white will be used later. First, mix the egg yolk with the icing sugar and vanilla sugar in a large bowl until the mixture is nice and fluffy. Then gradually stir in the vanilla sugar, vanilla extract, butter and flour.

Finally, stir in the lukewarm milk. Now beat the egg whites with a pinch of salt to a very stiff peak. Gently fold it into the batter. Important: It should not be stirred until smooth – the dough is ideal if there are still many egg white flakes left. It sits on top during baking and forms the fluffy meringue mass.

Now pour the batter into the mold. Bake in a preheated oven at 160 degrees for about an hour. At the end, the cake can be covered with some baking paper or aluminum foil so that the top layer does not become too dark. Remove from oven and let cool. If you want, you can sprinkle the cake with some icing sugar or decorate it with chocolate or fruit. Enjoy your meal!
