Date caramel is a vegan and sugar-free version of dulce de leche. Here is a simple recipe for the sweet dessert sauce.
Dulce de leche is a Latin American dessert sauce and is usually made with cream and lots of sugar. Instead, this date caramel is not only vegan, but also free of refined sugar. The preparation is uncomplicated and quick.

Almond butter

70 ml
plant-based milk

0.5 tsp
vanilla extract

1 pinch(es)
sea salt

Pit the Medjool dates. Then add it to a blender along with the almond butter, the plant-based milk of your choice and the vanilla extract.

Blend the ingredients on high until you get a smooth cream. Clue: Keep scraping the cream off the edge of the blender while pausing the blender.

If the date cream is too thick for you, you can simply add a plant drink. Finally season with sea salt. Finished!
Date caramel: possible variations and shelf life

You can easily change the date caramel according to your preferences with additional ingredients:
- Instead of the Medjool dates, you can also use normal dried dates for the preparation. However, you need to soak it in water for at least an hour before preparing the date caramel.
- Add a pinch of cream Cinnamon added to give it a Christmas flavor.
- With half a tablespoon Fairtrade cocoa powder the date caramel becomes a delicious chocolate cream.
The date caramel will keep in the fridge for about ten days.
