Chilaques: Perfect for an elaborate brunch

Chilaques: Perfect for an elaborate brunch


Too much salsa and tortilla left over? Then Chilaques, a spicy breakfast dish from Mexico, is perfect for that.


  1. Peel and finely chop the onion and garlic. Sauté both in olive oil. Toast the tomato paste together briefly and then add the tomato passata. Add the spices and bring to the boil. Simmer uncovered on medium-high for 15 minutes.

  2. While everything is simmering, preheat the oven to 180 degrees top/bottom heat. Cut the tortilla wraps lengthwise into 5 cm wide strips. Cut through 3-4 times. Brush the strips with olive oil and bake in the oven for 10 minutes until crispy.

  3. Remove the pot with the sauce from the stove. Marinate the baked chips in the sauce. Now heat some oil in a large pan and add 4 eggs. With the lid closed, fry the fried eggs on a medium flame for 6-7 minutes.

  4. Cut the radishes into thin slices and the onions into strips. Halve, pit and peel the avocado and cut into thin slices.

  5. For each serving, place the tortilla chips from the sauce on a plate. Arrange a fried egg, onions, radishes and half an avocado on top. Season with salt and pepper. Chop the fresh cilantro and sprinkle over the serving, if you like. Finished!
