
Christmas is over, but sprouting season is far from over. The tasty cabbage flowers can be harvested until March. But unlike in the run-up to Christmas, when Brussels sprouts are cooked or roasted as a side dish to hearty meals, after the turn of the year there is more focus on lighter dishes with Brussels sprouts. They focus on the little flowers themselves and their many nutrients. And so the delicious winter vegetables can be integrated into different meals – even in breakfast. The ingredients for the Brussels sprouts breakfast with bacon and egg
For two people you need 400 grams of Brussels sprouts, 8 slices of bacon, 4 eggs, 2 onions, 3 cloves of garlic, salt, pepper, olive oil. If you want: nutmeg, cumin (ground), chives.

The recipe for the delicious kale breakfast with fried egg and bacon
Here’s how it works: First, you need to bring all the ingredients to the size you’ll need them to cook at the end. Finely chop the onions and slice the garlic. Next, clean the Brussels sprouts by removing the outer leaves and cutting off the woody end of the stem. Do it a little wider than usual, it will make the next step easier: Now you have to separate the sprouts from each other.

Now heat in a pan on the stove and leave out the bacon. If you eat vegetarian, you can easily make a meatless alternative yourself instead of the bacon. Here we will show you how it is done. The vegan bacon does not need to be fried in the pan. When the bacon is crispy, you can remove it from the pan and drain on paper towels.
Now heat a little olive oil in a covered pan, slide in the eggs (preferably intact) and fry over a low to medium heat until fried eggs. The yolk should still be runny and the edges crisp. Feel free to add salt and pepper during the cooking process.
When the eggs are ready, they come out of the pan. In the same pan, fry the onions with a splash of new oil. After two to three minutes, add the garlic and Brussels sprout leaves. Fry it on a low to medium heat for eight to ten minutes, stirring frequently. Season the Brussels sprouts with salt and pepper – and if you prefer something coarser for breakfast, add a pinch of cumin and nutmeg.

Then it can be prepared. Place two of the fried eggs and four of the bacon strips and the fried Brussels sprouts on each plate. Garnish the plate with freshly ground pepper and, if you have it, fresh chives and your delicious breakfast with Brussels sprouts is ready.
