For the pancakes, mix flour, 1 pinch of salt, baking powder and baking soda. separate eggs. Using a hand mixer, whisk the egg whites and a pinch of salt until stiff, sprinkle over the sugar and continue to whisk for 1 minute. Mix the egg yolks and buttermilk well, then add to the flour mixture and mix well with a whisk. Fold the egg whites into the batter.

Preheat the oven to 100 degrees (80 degrees for a fan oven). Heat 1/2 tablespoon of oil in a covered pan. Pour 1-2 tablespoons of batter into the pan for each pancake. Fry about 6 pancakes at a time over moderate heat until golden brown on both sides. Keep the finished pancakes warm on a plate in the hot oven. Bake the remaining pancakes in the same way. Serve with butter and maple syrup.

Fry bacon in a covered pan without fat until crisp and keep warm in the preheated oven. Heat 1/2 tbsp oil in a pan and fry the small sausages until golden brown on all sides. Keep warm in the oven. Heat 1/2 tablespoon of oil in a pan and fry the eggs in fried eggs. Season with salt and pepper. Spread the pancakes on plates with a little butter and maple syrup, sausage, bacon and fried egg and serve immediately.
