This 7-cup cake recipe is great if you’re short on time and want to make a moist vegan cake.
The idea of the 7-cup cake is that you don’t need a scale or measuring cup to prepare it. All you need is one or more mugs, glasses or cups of the same size to measure the ingredients with.
If possible, use organic ingredients for the 7-cup cake. By purchasing organic products, you support more ecologically sustainable agriculture that uses the earth’s natural resources with care. Products with the organic seal are especially recommended demeter, organic soil and natural soilas they require stricter criteria than the EU organic seal.

First, mix all the wet ingredients with a whisk in a bowl: the vegan yogurt, the plant-based milk and the sunflower oil.

Then mix the dry ingredients together in a large bowl: the spelled flour, cornstarch, raw cane sugar and vanilla sugar, cream tartar and a pinch of salt.

Then add the wet ingredients to the dry ingredients and mix to a smooth batter. Grease a suitable cake pan with a little sunflower oil and pour in the cake batter.

Bake the 7-cup cake in the oven at 180 degrees top and bottom heat. After about 35 minutes it should be ready – you can check it with a chopstick sample.

You can easily modify our basic recipe for the 7-cup cake. For example, for a simple chocolate cake, you can use only 2 cups of flour and add 1/4 cup of cocoa powder. You can also use flavored yogurt instead of natural yogurt, such as wild berries or vanilla. You can also add berries or chocolate chips to the batter before baking.
Before serving, you can optionally dust the cooled 7-cup cake with powdered sugar or with sprinkles ripe glaze
