1. Granola

granola It’s delicious and really healthy too! Not for nothing is it the breakfast favorite of people who like it so sweet. Do you prefer granola with yogurt? But it’s also vegan. We reveal how!

Preparation: Crunchy rolled oats and nuts of your choice – walnuts, hazelnuts or almonds taste particularly good – mix with a teaspoon of cinnamon and lots of agave syrup. A nice mass should have formed at the end. Spread it out on a baking sheet and put it in the oven at 180 degrees for about 15 minutes. The agave syrup ensures that the oats and nuts are really crunchy. Stir from time to time so that the granola is brown on all sides.

As a yogurt substitute: Blend 1 banana and a handful of frozen raspberries or other berries with 1/2 cup oat milk in a blender until smooth. Put the finished granola on top, refine with toppings of your choice and voilà, you have a delicious and healthy breakfast in front of you that does not contain any animal products.

2. Vegan Smoked Salmon

Vegan smoked salmon is the trend par excellence and is currently being offered in every hip cafe in the big city. If you want to make it yourself at home, you need two things in particular: roots and smoke flavoring! Well done, it tastes deceptively real. In addition, the carrots are full of vitamins and minerals and are therefore good for your health. The best? With a slight twist, the recipe is also for you if you don’t like fish.

Preparation: It is best to use large carrots and cut them into long, thin strips with a vegetable peeler. Now cook the carrots for a few minutes until they are soft. Then add the carrot strips liquid smoke (1 teaspoon for 3 carrots), a little soy sauce, lemon juice, a splash of maple syrup and nori leaves. Simply leave the latter out if you don’t want it to be so “fishy”. Then leave the smoked salmon in an airtight container in the fridge for at least one night.

As a base: The vegan salmon tastes best on a bagel with cream cheese. Here too, it is very easy to find plant-based alternatives based on soy or oats. The range in the supermarkets is constantly growing. If you want to get creative yourself, you can conjure up a delicious dip from a piece of natural tofu, a clove of garlic and fresh herbs of your choice. Put everything in a blender and season with salt and pepper. Place the salmon on top and garnish with dill.

3. Vegan scrambled eggs

Do you like delicious scrambled eggs in the morning? Then try it as an alternative with the vegan variant. In this case, natural tofu is used as an egg substitute, which is ideal if you are on a high-protein diet and want to do without animal proteins. So the perfect solution to replace the scrambled egg on the breakfast table.

Preparation: The secret ingredients are Turmeric – for the yellow color – and Kala Namak. The black salt gives the dish a slightly sulphurous aroma that eggs are known for. Simply crumble the tofu and mix with some yeast flakes, pepper and paprika powder as needed. Then in the pan. If you prefer it a little “sloppy”, you can add soy yogurt.

As a basis: If you like it very classic, eat the Mett on a wheat roll with vegan margarine. Finally, garnish with onions and chives and enjoy.

5. Vegan Tomato Mozzarella

This Mediterranean classic is part of every good brunch. But is it also vegan? Actually yes! To make the plant-based cheese substitute, you only need 5 ingredients – namely 2 tablespoons of psyllium husks, 100 g of cashews, 4 tablespoons of yeast flakes and the juice of half a lemon.

Preparation: Soak the flea seeds and cashews in different containers for at least 2 hours. Then process all the ingredients in a blender to a cheesy mass and season with pepper and salt. Pour into a mozzarella-shaped bowl and place in the fridge overnight.
